Frazzled? Stressed? Tired? Try taking a walk

Yesterday, we went on a walk to "reset" a bad morning. The palm trees were rustling in the breeze, the water was rippling, the birds were singing. An alligator swam towards the shore, so we scooted along the path a little faster. Vultures were soaring in the sky above, scooping down right over our heads, and then taking off again. β€œCome back, birds!” Catherine was calling. We passed the bridge where there are usually fish, but the water is really low this time of year and we couldn't see any swimming. There was a set of desolate trees with a group of crows in and around them, calling out with their grim caw. It seemed like the opening shot of a horror film.

Being out in nature has a way of resetting your attitude, of helping you put things back in perspective.

White Bean & Spinach Soup

A while back, I got an issue of Real Simple in the mail that included a 4-week meal plan. I had been in a bit of a meal slump at the time, so the idea of having someone else plan out my menu for the month was something I embraced with full force.

a wedding cake mishap = a lesson in humility

My little Florida family just returned home from traveling for the holidays. We took a crazy road trip up to the DC area for Christmas, driving the 20 hours straight on the way up. (On the way back we were older and perhaps a little wiser and stopped for the night.) Our vacation with family in DC was wild and busy and fun and filled with SO much love, especially because all our siblings were together for a reunion in celebration of our dad's 60th birthday. Sophie was there with a gorgeous glow, snuggling her 2-week-old newborn girl. Maria blew us all away with her strength and endurance as she navigated holiday baking and cooking with a first-trimester stomach (yay for more babies! boo for morning sickness)--all while still managing to SMASH out those workouts.

building a children's library and 2 new christmas books

 I was a middle child. Growing up, there was always a steady stream of books available for me to read. My parents must have acquired books for my older siblings as they reached new developmental stages, so by the time I was old enough to read, there was already a vast library to choose from. When I was finished with one book, I would sit in front of the towering shelves and look at the spines, all neatly arranged, trying to decide which to start on next. The question never was whether I would start another book. It was always, simply, whichI can remember fingering certain volumes, intrigued by their covers, just waiting for the time when their wonders would be accessible to me. 

Recently, it dawned on me that it is one of my responsibilities, as a parent, to provide the opportunity for such wishful waiting to my own children. I want them to grow up with that same sense of eager anticipation.

peppermint fudge brownies

So, for a few months there this was my favorite brownie recipe. But over the weekend I revisited my old favorite brownie recipe and, well, it's back to being my favorite. Because it is truly amazing. I don't know what I was thinking.

Actually, I do know what I was thinking. That other recipe is so quick to make, and comes out more like a standard brownie box mix. No-fuss, simple plain-old brownie goodness. Something you wouldn't feel bad about scooping ice cream on top. Or layering in an ice cream cake.

THIS Peppermint Fudge Brownie, on the other hand, stands alone. With a deep cocoa flavor, fudge-like consistency, peppermint filling and laden with chocolate chips, it would border on obscene to serve it with anything else.

what I learned from taking my toddler to a museum

Even if I had all the time in the world, and I examined every artifact, and meticulously read every label, would I remember any of it in a week? A month? A year? Probably not. But if I picked out one item and examined it closely, thoughtfully, there was a higher chance I would actually learn something from it. Having a toddler forced me to be selective about my consumption. Having a toddler actually increased the odds that I would remember something from this trip.

easiest fresh cranberry-orange relish

We've made this cranberry-orange relish every year for Thanksgiving for as far back as I can remember. It adds brightness to an otherwise heavy thanksgiving meal. Although a warmed or jellied cranberry sauce often melds better with the other elements on the plate (stuffing, gravy, mashed potatoes), there is something so superb about this fresh and zingy relish paired with a slice of turkey breast. So usually I take a bit of both -- the fresh cranberry relish and the cooked cranberry sauce -- and alternate my bites of turkey between the two.

This is a recipe I discovered in a food magazine in high school, and I've been making it every fall ever since. The cake batter is so easy to mix up (no mixing aid required). It uses one full can of pumpkin puree (no leftovers to deal with). The pumpkin flavor is not overpowering, adding a subtle earthiness and a delicious moistness to the cake. The cranberries add a bit of zing, and the Brown Butter Frosting takes this treat to the next level.

Biscotti is just an excuse to have cookies for breakfast, and I am 100% okay with that. This recipe for biscotti has no pretenses to anything other than a sweet, crunchy bite. Heck! It even has chocolate drizzled on top. But they are also loaded with almonds and cranberries, which makes them both satisfying and nutritious. They are just tender enough to be eaten on their own without breaking any teeth, but they hold up extremely well--and perhaps are improved--when dipped in coffee, which brings them into the breakfast realm, which, like I said, is fine by me.

Two years ago, I picked up a pair of bird prints at a thrift store. They were nice enough, but more importantly, they were only $2 a piece. We had just moved into a new place and I was 9 months pregnant, so nesting was on my mind. These prints would go somewhere on some wall. But little C arrived later that week and I never had a chance to hang the prints. Every time I hauled them out of the closest, they just looked so....tired. 

This weekend I was feeling all empowered to get on top of the blank white walls in the playroom. I examined the prints again. They were printed on beige paper, offset by a lackluster gray matte and trapped in a boring wood frame with peeling gold paint. How to update them? Bring in a bright color.

Like Maria mentioned, we all have our favorite variations of the Joy of Cooking's Sugar Drop Cookies with Oil. The original recipe is perfect, so I don't typically mess with it. At the most, I might add some vanilla bean powder to the sugar that the cookies are rolled in, giving them a pretty vanilla-flecked exterior.  But sometimes for a party I think it's fun to have a whole spread of the same cookie in different variations. Since these are so simple to mix up, and quick to bake, you can churn out a bunch of different variations within an hour.

Thinking about cake decorating got me reminiscing about some of my favorite cakes of the past. I've never taken any cake baking or decorating classes, unless you count Google & YouTube. It is simply a hobby (some might say obsession). I like to think about cake flavor combinations, and I like to think about new ways to decorate cakes, and I like to look up different techniques, and I scroll through Pinterest for extra inspiration. Whenever I see an opportunity to bake a cake for some occasion, I pounce on it. It's selfish, really. My mind is overflowing with cake ideas and I want to try them out.

Burritos smothered in Green Sauce

In high school, we had a subscription to Bon Appetit and my mom would menu plan based on the recipes in that month's issue. This method of menu-planning happily led both to some very exotic dinners and to the discovery of some of my favorite recipes, recipes which I return to again and again.  

But four and half years ago I married a man from Colorado who, although appreciative of the finer things in life, really just wants to eat meat & potatoes. After laughing at the kinds of food he would request (hamburger gravy, for instance), I eventually broke down and gave the simple fare a try. Wow. There's no denying how comforting and delicious it can be.
